MGS3 would make an easy deal depending on how they pull it off. MGS1 could also make it. MGS2 and 4 however, I agree with you. They won't work. People will just be like, WTF? MGS3 is as straight forward as the series gets. It's more or less the beginning so there isn't any twisted backplot or triple-revelation at the end, aside from Ocelot's deal, which could easily be excluded in a film as it is not vital to the rest of the Snake Eater plotline (it is more relevant to later games and Ocelot's backstory).
